Cherry Ice Cream

I always see Traverse City Cherry ice cream in the store, so I thought I’d give it a try, and it turns out it is really easy to make and a prefect way to save that cherry flavor for all year long!

Ingredients:

  • 3 cups Interwater Farms pitted sweet cherries

  • 1 cup heavy cream

  • 1 cup milk

  • 1/3 cup sugar

  • 1/4 teaspoon kosher salt

  • 1 teaspoon vanilla extract

Ingredients (chocolate swirl):

  • 1/2 cup semi-sweet chocolate chips

  • 2 teaspoons coconut oil

Directions:

  • Combine the cherries, cream, milk, sugar, salt, and vanilla in a blender and puree until completely smooth.

  • While the ice cream is churning, combine chocolate chips and coconut oil in a small glass bowl. Microwave for one minute, and remove and stir until smooth. Heat more if needed.

  • Let chocolate swirl cool to room temperature while ice cream finishes churning.

  • Once ready, transfer about 1/3 of the ice cream to an airtight container and drizzle about 1/3 of the melted chocolate on top. Repeat this twice.

  • Freeze until ready to eat or serve immidiately for soft-serve ice cream.
