Chocolate Cherry Square Cookies

There are two things I can never seem to get enough of: cherries, and chocolate. Luckily for me, this recipe has both and is yummy all cherry season long!

Ingredients:

  • 4 cups AP flour

  • 1 1/2 cup brown sugar

  • 1 teaspoon salt

  • 2 cups room temperature butter

  • 16 ounces chocolate chips

  • 60 pitted Interwater Farms sweet cherries

Directions:

Mix flour, brown sugar, and salt together and cut in the butter. Mix into a ball and press into an ungreased sheet cake pan approximately 15x20 inches. Bake at 350F for 15 minutes, or until light golden brown. Cool and cut into 1 1/2 inch sqaures while still warm. Melt chocolate chips into a double boiler. Put about 1/2 a teapsoon of melted chocolate on a cookie square, top with a cherry, and then another dab of melted chocolate. A small baby spoon works well for this. Let cookies cool until chocolate fully sets, if you can help not eating them :)
