Peach Cobbler

Who doesn’t love a good peach cobbler?

Ingredients (filling):

  • 6-8 large Interwater Farms peaches, peeled and sliced

  • 2 1/2 tablespoons cornstarch

  • 1 cup sugar

Crust:

  • 1 cup Ap flour

  • 2 egg yolks

  • 1/4 cup butter, melted

  • 1 teaspoon baing powder

  • 1 cup sugar

  • 2 egg whites, stiffly beaten

Directions:

Combine peaches, cornstarch, and sugar. Pour into a greased 13x9x2 inch baking pan. For crust, combine all ingredients except egg whites in a mixing bowl. Gently fold egg whites into batter. Spread over peach filling. Bake at 375F for about 45 minutes or until the fruit is bubbling around the edges ad the top is golden.
