Peaches & Cream Overnight Oats
This might be a hot take, but I LOVE oatmeal over any breakfast food. You can’t go wrong with it, and it’s super versatile, you can add pretty much anything! Usually I am a hot oatmeal purist though, and I don’t go for the overnight oats recipes, but this one I love!
Ingredients:
2 Interwater Farms peaches
2 cups milk
1 tablespoon maple syrup
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
pinch of salt
2 cups rolled oats
2 tablespoons chia seeds
1/4 cup plain yogurt
Directions:
Quarter one peach and finley dice the other; feel free to peel the peaches if you want to as well. Add the quartered peach to a blender along with the milk, maple syrup, vanilla, cinnamon, and salt. Blend on high for 45-60 seconds, until the peaches are finely blended into the milk.
Add the oats, chia seeds, and yogurt to a large bowl. Pour the peach milk into the bowl, and stir until everything is combined. Let sit for five minutes to thicken, and then add in the diced peaches and fold until evenly distributed.
Transfer the oats to 2-3 jars or other containers, then store in the fridge for at least four hours or preferably overnight, but not longer than five days.
